End Your Summer With The Best Summer Cocktails
I cannot believe I am saying this, but the end of summer is here! Oh, it breaks my heart knowing that pool days, cut off denims, crop tops, beach trips, and all of the above are slowly coming to an end. We have to make the most of these last few weeks of summer. If you don't already have end of summer plans, make some and fast. Get your family and friends together and ride out to the beach or sun bathe by the pool. Go and fire up the grill and enjoy some great food and the weather. I know to wind down my summer I will be catching plenty of sun rays, taking amazing photos, and sipping a few (yes few) refreshing adult beverages to stay cool. So cheers to the freaking END OF SUMMER and enjoy this list of some of my favorite summer cocktails.
1 oz. Absolut Citron 1 oz. lillet 2 oz. pineapple juice 1/2 oz. simple syrup 3 raspberries
Shake with ice and strain over ice.
8 oz. Pimm's No. 1 Cup 24 oz. chilled lemon-lime soda
Add mint, cucumber, orange, and strawberry. Mix in a pitcher filled with ice.
Add ingredients, stir, and drizzle syrup.
2 tablespoons orange curacao
2 tablespoons light rum
1/4 cup orange juice
Fill glass with ice. Pour in light rum, orange curaçao, orange juice, lime juice, orgeat, and simple syrup.
5 fresh mint leaves 1 tsp. granulated sugar 4 lime wedges, juiced 2 oz. Bacardi Razz 1/4 oz. Chambord 1/4 oz. Blue Curaçao Splash of club soda Garnish: mint, blueberries, and raspberries In a tall glass, crush mint with a fork. Add sugar and lime juice; stir. Add Bacardi, Chambord, and Blue Curaçao. Mix, and top with club soda. Garnish.

Frozen Watermelon Margarita
4 cups cubed seedless watermelon
Rub rim of 8 chilled glasses with wedge of lime. Dip rims in coarse salt to coat. Chill until ready to serve. Working in batches, combine watermelon, fresh lime juice, Cointreau and tequila in a blender. Crush a tray of ice cubes in blender, then pour in 1 1/2 to 2 cups of margarita mixture and process until slushy. Pour into chilled glasses and garnish with mint, if desired. Serve immediately. Repeat with remaining ice and margarita mixture.
Mix 24 oz. peach nectar, 1 (750 ml) bottle white wine, 1 sliced orange and peach wedges from 1 (15 oz.) can (drained) in pitcher; chill for 1 hour. When ready to serve, add 1 liter club soda and ice cubes to pitcher and stir well. Garnish with more orange slices and peach wedges, if desired.
