Orange Soy Chicken - Cooking With Cassie
My favorite room in the entire house has to be the pantry. There is something about being surrounded by so many ingredients that gets my heart racing with excitement. An adrenaline rush from thinking about the endless possibilities of delicious dishes. Though during the week, I cannot allow myself to get overwhelmed by the contents gifted to me by the pantry – instead, I keep it simple. Like this chicken seasoned with soy sauce and sweetened using fresh oranges.
This is one of my favorite ways to prepare chicken drumsticks. It’s so simple, yet so flavorful – a definite must for your weeknight dinner.
Notes to bring to your attention before we begin:
- You can swap the drumsticks for chicken thighs if you wish.
- For the heat to penetrate the meat quicker, you may score the chicken with a sharp knife.
- As a matter of preference, the skin can be removed prior to frying.
Recipe & Method:
Season 6 chicken drumsticks with salt and 1 tbsp soy sauce.
Fry in a pan until the chicken has browned well.
Remove and set aside.
Make a sauce in the same pan by frying 3 garlic cloves until browned and fragrant.
Add 1 tbsp soy sauce; juice of 1 orange; 2 tbsp honey; and 1 tbsp lemon juice.
Return your chicken back to the pan and reduce the heat to LOW.
Allow the chicken to cook in the sauce as it reduces.
Check to make sure chicken is cooked before garnishing with orange slices and herbs of your choice. Serve hot with a crunchy salad or couscous and enjoy.
When it comes to savory cooking, there is leeway for adjustment in amounts; so I share the quantities I use, but feel free to increase/decrease any aspect according to your taste. Make it your own and have fun with it!
